Food microbiology and hygiene
Food-associated microorganisms are the focus of research and teaching activity of our group Food microbiology and hygiene. They affect the consistency of food in a beneficial way as members of value-added processes in the food production chain. On the other hand they act as spoiling organisms or as food pathogens with severe impact on food safety. The biology of these organisms, their occurrence and ecology are the working fields of our group. We are working on specific questions in research projects focused on their ecology and systematics. Recent research results but also fundamentals of the field are teaching objects of our group in several degree programs within the disciplines of food science, food technology, microbiology, food chemistry as well as the respective teaching degrees.
